Founded by Forrest and Leroy Raffel, the first Arby's restaurant opened in Boardman, Ohio, on July 23, 1964. It was located near Youngstown, Ohio. The restaurant might have been called "Big Tex," if an Akron, Ohio, business had not already claimed that name. Instead, the two brothers settled on Arby's, based on the initials R.B., which stand for the Raffel Brothers. In a world of fast food restaurants whose main menu offering was some variation on a hamburger, Forrest and Leroy offered their roast beef sandwiches as an alternative. The original menu also included soft drinks and chips. They further differentiated themselves by creating a more luxurious interior in the hope of attracting more upscale diners. While other restaurants sold hamburgers for around $0.15, the brothers sold Arby's roast beef sandwiches for $0.69. The classic ten-gallon hat sign, which still appears outside some Arby's locations, was designed by Peskin Sign Co., but it was replaced by a sleeker, modernized version in 1971.
The first Arby's franchise opened in Akron, Ohio in 1965, and expansion outside of Ohio began in 1968 with restaurants opening in Pittsburgh, Pennsylvania and Detroit, Michigan. During the '70s, Arby's began opening 50 new restaurants per year and added several classic mainstays to its menu, including Curly Fries, Jamocha Shakes, the Beef 'n' Cheddar sandwich, Arby's Sauce, and Horsey Sauce. The Arby's roast beef sandwich has been marinated and slow roasted in its restaurants in the same way since 1971. The first international restaurant opened in 1981 in Japan, but the first Canadian restaurant didn't open until 1992 in Quebec. Along with the regular Arby's menu, the Quebec restaurant sells poutine, a French-Canadian dish consisting of French fries, cheese curds, and a light brown gravy. In 1991, Arby's became the first fast food restaurant to offer a "lite" menu that included salads and sandwiches that were 94 percent fat free and that contained less than 300 calories. In 1994, Arby's became the first fast food restaurant to ban smoking at all of its locations.
Arby's introduced its Market Fresh menu in 2001. The original choices included Roast Beef and Swiss, Roast Turkey and Swiss, Roast Ham and Swiss, and Roast Chicken Caesar. Market Fresh Wraps followed in 2004. The French Dip 'n' Swiss and the Philly Beef Supreme were added in 2003, and two Reuben sandwiches, the corned beef Reuben and the turkey Reuben, were added in 2005. Toasted Subs, including the Turkey Bacon Club, the Philly Beef Toasted Sub, the French Dip & Swiss Toasted Sub, the Classic Italian Toasted Sub, the Chicken Parmesan Toasted Sub, and the Meatball Toasted Sub, were introduced in 2007. The Smokehouse Brisket was added in 2013, and gyros were permanently added to the menu in 2016. Arby's popular Sliders were added in 2015. Arby's success with the addition of the Sliders earned the restaurant the Nation's Restaurant News 2016 MenuMasters Award. In October, 2016, word leaked out that Arby’s would be testing a venison sandwich over four days during deer hunting in Georgia, Tennessee, Wisconsin, Minnesota, Michigan, and Pennsylvania. USA Today reported that Arby's used farm-raised venison imported from New Zealand to create the sandwich. USA Today also discovered and published the locations of the 17 participating restaurants, and the sandwiches sold out on the first day due to a combination of demand from hunters and public curiosity.
